In Colmar, two Michelin-starred chef Jean-Yves Schillinger features Hida beef on his menu, praising its unique flavour and tenderness. Belgian chef Donald Deschagt, known as the "seaweed chef", promotes the nutritional benefits and versatility of wakame in European cuisine.
