A restaurant featuring sushi and fireside cooking is opening in Manchester this summer

A restaurant specialising in modern Japanese dining and contemporary cocktails is opening in Manchester this month. Kitten will encompass an extensive sushi menu, as well as dishes cooked over one of the largest robatayaki grills in the city.

The flagship dining destination, featuring walls of bamboo and a towering bonsai tree, is opening at Deansgate Square on Friday, June 17. The elevated dining experience will give guests a front row seat of master sushi chefs at work, while glancing into the kitchen to see other dishes grilled over open flames.

The kitchen team will boast some serious culinary pedigree, with head chef Josh Gabrielides joining from Ivy Asia and head sushi chef Daniel Zhou from Peter Street Kitchen. The brigade also features experienced chefs from Sticks and Sushi and other top ranked Pan-Asian restaurants around the country.

Taking centre stage in the venue, the sushi chefs will serve up an refined raw menu featuring a selection of freshly made dishes including black and blue tuna with pickled kohlrabi and squid ink tuille, and Wagyu beef Tataki with truffle ponzu, sliced truffle, chives and crispy shallots. Meanwhile, the Robata menu includes T-bones with pickled red radish and sesame miso dressing; Chicken Yakitori with pickled heritage carrots and pink ginger; and carefully crafted duck, pork and lamb dishes.

Those who have a hankering for seafood will be able to tuck into a whole sea bass cooked over the charcoal grill served with ginger, sake steamed clams and seaweed, and salmon with dashi poached choi sum, kohlrabi, caviar and split shiso dressing.
