The little-known team of master bakers serving up freshly baked goodness at one of Manchester's best known spots

Standing outside the entrance of Albert's Schloss early on a Tuesday morning, our senses were hit by the sweet aroma of warm, freshly baked bread. For many, it's not a smell they would likely associate with the Bavarian-style bar and eatery, which is much more widely known for its traditional German food and pilsner beers.

But, when we followed our noses inside, we discovered a team of master bakers diligently working to serve up some of the most delicious carby goodness the city has to offer.

Each day, the bakery team make close to 250 baked goods for the Schloss’ popular Cook Haus breakfast menu. Inspired by the luscious pastry of Alpine Europe, it boasts treats like irresistible cinnamon rolls, crunchy, soft, warm and sweet croissants and pretzels as big as your head.

Amazingly, the team of master bakers only consists of three people. Norbert Szewczyk, Tabitha Hunt and head baker Rafal Pawelko. This small but mighty team make their way to the kitchen from the crack of dawn for a mammoth 10 hour shift where they expertly produce all the bakery products to be sold at the Albert's Schloss on Deansgate.

The efficiency and teamwork is impressive, with the head baker away while the MEN visited, only Norbert and Tabitha were in the kitchen during our visit. The pair were well within the swing of things with copious amounts of batter already churned and multiple ovens loudly humming.

Tabitha and Norbert barely broke a sweat as they zig zagged their way through the kitchen, mixing, kneading, slicing, baking and powdering the delicious food all on time for the 9am service.
